You're not alone in having to look over the windshield when driving. I guess you could cut some skylights along the front of the windshield, but a more "elegant" solution might be an old dash prism, from when cars came with big external sun visors, it mounted on the dash and you could "see" the traffic lights though it or at least what colour the light was. A google search will bring up pictures of what I'm talking about.

I myself have the 6+ foot syndrome, see the issue in my buggy, old land cruiser  and also in other compact cars.  Before my fight with doctors and hospitals, I was looking into a project I spotted on line (build it yourself) that uses submicro computer (Arduino or Raspberry Pi) to make a heads up display.

It was very cheap to make over all.  Used the reflective see through screens like out military has in aircraft.
One can display a forward looking camera (regular visual or a flir type or both) and add text overlays for things like compass, gps, gauge reading or what ever desired. 

I since noticed several items with this camera heads up display on the e bay from the chinnse sales sources.

 
I was also after seeing some of the Baja runners noticed they use a Lowrance display with land based software adding a camera pop up on its screen.  Lowrance makes some really nice vehicle units (could replace a dash board fully and then some). 

I think the T-OLED tech offers the best solution but it's not quite here yet.

Make sure your seats are mounted as close to the floor as you can get them.  At 6' 5" myself I am very aware of seat height issues.

I ended up just cutting two view ports in the top, one on either side on the center bar.  I sewed some clear vinyl window stuff to fill the holes.
Works well.
